Jaggery / Gud

Jaggery or Gud is prepared from sugarcane after its juice is boiled over fire in a large iron container with repeated churning and stirring. The boiled thick Gud produced out of this process is left to cool and harden before it is sold. Gud is relished especially in winter season in the state of Punjab.
